2 cups Almond Flour
1 tablespoon Arrow Root or Corn Starch
1 teaspoon Guar Gum or Xanthan Gum
1/2 teaspoon Baking Powder
1 teaspoon Baking Soda
1/2 teaspoon Sea Salt
1/8 teaspoon Cinnamon
1/4 teaspoon Plain Unflavored Stevia (Nature’s Stevia)
1/2 cup Milk
1/3 cup melted Coconut oil (Expeller pressed, no coconut flavor)
1 teaspoon Vanilla Extract
2 Over ripe Bananas
Combine all wet ingredients in a bowl and mix well. Combine all dry ingredients in a separate bowl and mix well. Next, combine the wet and dry ingredients. Now place mix in a greased pan and bake at 350 for 45-50 minutes. Makes 1 loaf. Store in refrigerator.
Notes: When measuring the stevia, use the dropper to fill the measuring spoon to avoid gumming up the threads on the stevia bottle. The coconut oil must not be hot. Just warm enough to melt.
